This is a very versatile marinade and is especially nice used with the many different cuts of beef. Used as a basic marinade for meat, it can be so easily adapted to be used with lamb or pork, eg. add chopped fresh mint and perhaps some honey, if using with lamb, or grated fresh ginger if using with Pork.
- 1⁄2 cup light olive oil
- 1 cup red wine
- 3 tablespoons light soy sauce
- 1 tablespoon Worcestershire sauce (more or less according to taste - but don't overdo!!)
- 4 cloves garlic, crushed
- freshly ground black pepper
- Combine all the ingredients and mix well.
I marinaded a rolled beef topside joint in this marinade overnight last night and then braised it in my slow cooker today, and it was absolutely delicious! Instead of plain olive oil I used quarter cup of sundried tomato infused olive oil and quarter cup chilli infused olive oil and it gave it a nice little kick. I will definitely be using this marinade again.
