All Purpose Cole Slaw

- 1 (14 ounce) package coleslaw mix (found in produce section of store)
- 2 tablespoons milk
- 1 tablespoon white vinegar
- 1 tablespoon sugar
- 1⁄2 cup mayonnaise
- 1 small green bell pepper (try to find green bell pepper that is smaller in size)
directions
- Dice green bell pepper to small bite size bits. Do not put in processor! this will make it too watery! must dice by hand.
- In a large bowl, add the cole slaw mix and then diced pepper and blend until well mixed.
- Add the milk, white vinegar, sugar & mayo and blend again.
- For best results, I keep mine in an airtight container and let it sit in Fridge overnight. Right before serving, it may need a touch more of mayo but you can use your own judgement on that. Also, if it does not seem sweet enough & the cabbage is on a little tangy side, add a little sprinkle more of sugar.

I joined RZ in 2007 while home on maternity leave after my son was born. I admit, I had no clue how to cook or what to cook! My Mom (who is 100% Italian) and my Grandmother who also lives with my Family did all of the cooking so I never did it or learned. Everyone I knew just went crazy for the dishes that my Mom or Grandma made and being in my 30's I was a bit embarassed to admit, I had no idea how to cook like they do. I decided to experiment with cooking on my own and this site is absolutely my favorite for recipes! By Nov 2008 my second child, a daughter was born. She was born disabled so I am now a full time home Mom and I have to admit, cooking is now something that helps soothe me, gets me through difficult times and something that I just enjoy so much and just 2 years ago, never knew how! I have RZ to thank and all it's wonderful members who share recipes! I eventually would like to gather more of my Mom & Grandmother's recipes and share them with all of you!
