  • 2 (800 g) can chopped tomatoes
  • 2000.0 ml vegetable stock
  • 4 carrots, peeled and sliced
  • 2 (840 g) can mixed beans, drained and rinsed
  • 175 g spinach
  • 14.79 ml roasted red pepper pesto

directions

  • Tip the canned tomatoes into a saucepan along with the stock, bring to the boil.
  • turn down the heat and throw in the carrots.
  • Gently simmer the soup until the carrots are cooked, about 15 minutes.
  • Stir in the pulses and spinach and heat until the spinach has wilted.
  • Spoon in the pesto and gently mix into the soup.
  • Serve with some crusty bread.

How I rate... 5 stars - perfect, will make again without any changes. 4 stars - Liked it, will make again again but with changes. 3 stars - had to make major changes but got it to work. 2 stars - had to make major changes and it didn't work. 1 star - went terribly, a waste of time and ingredients, I cried, BF cried the cats cried you get the picture...
