This recipe came from a 4-H cookbook I had back in the early 80's. It's nothing like real jambalaya.

Ingredients Nutrition


  1. Melt butter in large skillet.
  2. Saute onion, green pepper, and beef until browned.
  3. Drain fat.
  4. Drain tomatoes, and add enough water to juice to make 1 1/2 cups.
  5. Add tomatoes, bay leaf, salt, sugar, and liquid.
  6. Bring to a slow boil.
  7. Cover and simmer for 5 minutes.
  8. Add rice.
  9. Cover and simmer another 5 minutes.
