Alabama Oven Fried Chicken

This is a simple recipe and most people have the needed ingredients on hand. It was in a cookbook Mother gave me from the Huntsville, Alabama Pilot Club years ago. I have made my changes to it over the years. Hope you enjoy it!

  1. Wash and dry the chicken.
  2. Salt and pepper and then sprinkle lightly with the flour.
  3. Place in greased casserole and pour melted margarine over each piece.
  4. Bake at 375 degrees for 1 1/2 hours until golden brown. (Ovens vary, please keep checking.).

This was great! I used butter in place of the margarine and used bone-in breasts and thighs. I would use less than 1/4 cup flour for this next time. I cooked the pieces at 400F for about 45 minutes - crispy skin and moist meat. Made for Best of 2011. Thanks eHelen! :)

I halved this recipe and roasted a 1-1/4 lb. bone-in, skin-on chicken breast. Roasted at 425 degrees for 40 minutes. The skin was crispy and the meat was moist and tender. Thanks for a great and easy recipe.
