    This is a simple recipe and most people have the needed ingredients on hand. It was in a cookbook Mother gave me from the Huntsville, Alabama Pilot Club years ago. I have made my changes to it over the years. Hope you enjoy it!

    Directions:

      Wash and dry the chicken.
    2. 2
      Salt and pepper and then sprinkle lightly with the flour.
    3. 3
      Place in greased casserole and pour melted margarine over each piece.
    4. 4
      Bake at 375 degrees for 1 1/2 hours until golden brown. (Ovens vary, please keep checking.).

      This was great! I used butter in place of the margarine and used bone-in breasts and thighs. I would use less than 1/4 cup flour for this next time. I cooked the pieces at 400F for about 45 minutes - crispy skin and moist meat. Made for Best of 2011. Thanks eHelen! :)

      I halved this recipe and roasted a 1-1/4 lb. bone-in, skin-on chicken breast. Roasted at 425 degrees for 40 minutes. The skin was crispy and the meat was moist and tender. Thanks for a great and easy recipe.
