Peel tomatoes and cut into wedges, wash cucumber and core skin with the tines of fork (or you can peel completely) and cut into thin slices. Slice onion using some of the green tops, and then combine all the veggies with the oregano in a salad bowl.

Mix together olive oil, lemon juice, salt and pepper, taste and adjust (if you like lots of tang you may want more lemon, more oil if you like it mild). Pour dressing over salad and gently toss to mix.

Serve right away or let the salad and dressing mingle awhile - I like mine to sit for 15 minutes or so.
What a wonderful salad! I added more lemon/less oil for more zing and I just loved the light, fresh flavour and the dressing was just perfect for me. Thanks for sharing!

Oh so perfect. This is a very refreshing salad. Easy peasy to throw together and a perfect summer side. I didn't peel my veggies as we like the extra crunch you get from it. Other than that though I followed this recipe exactly and wouldn't change a thing. Made for ZWT6: No-Nonsense Nibblers.

This was a very easy and tasty recipe. Sadly it's winter here and the tomatoes are looking a bit sickly and pale and don't taste as good as they could but I can imagine this would be even better with fresh summer tomatoes from the garden. I think I might add a bit more oregano next time. Made for the Greek Leg of ZWT6 (Voracious Vagabonds)
