      Combine the first 7 ingredients in a heavy, non-aluminum saucepan; bring to a boil.

      Reduce heat to medium-low and simmer, uncovered, for 20-25 minutes or until liquid has evaporated, stirring frequently.

      Remove from the heat; stir in salt, if desired.

      Let cool for 5 minutes.

      Stir in the dill.
    6. 6
      Spoon into a serving bowl.

      Serve at room temperature and refrigerate unused portion.

      This is a wonderful salad, Uncle Miller. I made it for dinner last night. Since I didn't have any of the vinegar on hand, I used some fresh lemon juice instead which worked very well. Also, since my Mom has been diagnosed with Type 2 diabetes, we have cut down on salt{for her blood pressure} and sugar. Hence, I omitted the brown sugar completely. I did not use any jalapeno pepper also in this. It was a very good salad and one my parents and I enjoyed alot. We will miss you alot, Uncle Miller. Your fond memories will stay very close to our hearts. With many heartfelt good wishes for you, Charishma
