good and nutritious recipe. I couldn't find any jalapeno so tried some pickled chillies and it came out rather well.

  1. Cook onion and green pepper in peanut oil in a skillet for about 3-5 minutes, or until tender.
  2. Add spinach and tomato to skillet.
  3. Cover and cook on low heat for about 5 minutes, or until spinach is tender.
  4. Stir in all remaining ingredients. Cook until hot throughout.
  5. Serving suggestion: Server with hot cooked rice or couscous.
