- 14.79 ml peanut oil
- 1 garlic clove, minced
- 793.78 g can chopped tomatoes, undrained
- 170.09 g can tomato paste
- 118.29 ml creamy peanut butter
- 946.36 ml chicken broth
- 14.79 ml balsamic vinegar
- 1.23 ml cayenne pepper
- 9.85 ml kosher salt
- 236.59 ml white rice
- 6 scallions, chopped (optional)
- 59.14 ml salted peanuts, coarsely chopped (optional)
directions
- In a medium saucepan over medium, heat the oil and garlic for 1 minute. Add the tomatoes, tomato paste, peanut butter, broth, vinegar, cayenne, and salt, whisk to combine.
- Bring to a boil. Add the rice, reduce heat to low, cover and cook for 20 minutes.
- Garnish with scallions and peanuts.
