I grew up in Ghana and this was my FAVORITE with fufu or rice! I made it tonight for some friends and everyone LOVES it!
I'm so loving it.....I am eating right now as we speak. I didn't have garlic powder, so used minced garlic from my fridge.....everything else was followed to the letter. I like the taste of it, I can taste the peanut butter and the tomato paste, and they both seem to work together. Thank you so much for this recipe - I am enjoying it LOL!!!!
This was very easy to make, and the ingredients are readily available. I did use more onion and fresh garlic rather than onion and garlic powder. I browned the outside of the chicken in the oil before cooking the onion. I did not cook the chicken fully, because it was to be cooked in the sauce later. I have to admit it was not love at first bite, but not hate either. It is a new flavor for chicken for us, and although it was interesting, we'll probably not repeat it. Thank you for the educational experience.
