This was a very tasty dish -- loved the peanut butter along with the curry powder. I used boneless chicken thighs; therefore, I had to add some chicken broth to the rice, but it still did not dilute the flavor or the texture of the sauce. Next time I will use chicken pieces with skin on so that there will be more moisture to cook the rice. We really enjoyed this dish! Made for the Everyday is a Holiday tag, January, 2012

Directions

  1. Brown chicken in vegetable oil in large frying pan; set aside.
  2. Remove all but 2 tablespoons of oil and drippings in pan.
  3. Stir in curry powder and salt, onion, red pepper, tomato and rice.
  4. Cover and simmer 5 minutes; return chicken to pan.
  5. Cover; simmer until chicken is tender.
  6. Remove chicken to large platter.
  7. Blend peanut butter and water; stir into vegetables.
  8. Heat to boiling.
  9. Spoon over chicken.
