Leave out the vodka for a child friendly version.

  1. Combine 1 cup water, honey, lime rind and juice in a saucepan.
  2. Scrape seeds from vanilla bean and add to pot along with the beans.
  3. Place over high heat, bring to the boil.
  4. Reduce heat, simmer for 5 minutes.
  5. Transfer to jug and chill, remove vanilla pods.
  6. Cut fruit into wedges. place in large bowl, add berries and cherries.
  7. Add vodka to chilled syrup.
  8. Pour syrup over fruit and stir gently to combine.
  9. Keep in fridge till ready to serve.
