Adrienne's Chocolate Chip Cake

Once upon a time, before I ever got married (first or second time), long, long ago (well, not that long ago, how old do you think I am?), I used to have a roommate called Adrienne. Two more different people couldn't have lived together, be we got along wonderfully. Now, 24 years later, she's living in New York and I'm seven time zones away in Israel, but we still keep in touch. Adrienne and I always get together when I visit New York, she's always happy to take my girls to Target, which makes everyone happy. She just sent me this recipe, with her permission to post it here. Enjoy! The directions are all Adrienne's, with a little of my editing.

Do you know how hard it is to find a bundt cake on this site WITHOUT cake mix in it?????? I was VERY pleased to find a real homemade bundt cake recipe that taste just as good as the cheating ones. I used margarine and skim milk since that is what I had in the fridge at the moment. This does make a whole lot tho, so I sent my mother to work today with a great treat to take to her friends and everyone in her work loved this recipe. I make a powdered sugar glaze and drizzled it over the top of the cake. It was a bit heavy, but that may be because I might have overworked the mixture after adding the egg whites. You can tell Adrienne that her cake was very much enjoyed!

  1. In small mixing bowl, beat 5 egg whites until high and stiff, place in the refrigerator.
  2. In large mixing bowl, mix up everything but the chocolate chips (use an electric mixer.
  3. Wait until mixture is well blended and then add the chips.
  4. Then, mix in the egg whites by hand using a spatula. Be gentle.
  5. Pour the entire mixture in a bundt pan, well greased up with something like Pam original with flour-I find that works best.
  6. Bake at 350 degrees for approximately one hour, the testing stick should come out slightly damp.
  7. Place cake on a cooling rack, still right side up in bundt pan.
  8. After 20 minutes, turn over onto the serving platter and let cool.
  9. Any mistakes can be covered up with powdered sugar.
  10. Avoid drafts-it can fall.
  11. This cake's prep time is only 15 minutes and it serves a lot of people.
