This recipe seemed simple enough, but I realized once I got going that there were a few things missing that might have inusred a more positive experience. For the ingredients, listed as "1 can condensed milk" & "500 g sugar" I used a 14 oz can of sweetened condensed milk (maybe it's supposed to be evaporated milk?) & using a kitchen scale for the sugar I measured 2-1/2 cups granulated sugar. The instructions don't call for a specific pan size so I used a 11x7 bar cookie pan. No. 4 instructs to cook until the mixture leaves the sides of the pan. On high flame it was starting to burn (even with constant stirring) so I reduced to medium to keep a simmer & then added a candy thermometer. At no time did the mixture "leave the sides of the pan" like a pie crust coming together does. So I was very confused as to how long to cook. After consulting toffee recipes in a couple cookbooks I kept stirring & cooking until the soft crack stage (290Â°). It was approximately 50 minutes of stirring & cooking at the medium heat, as if I went higher it would almost immediately boil over the sides of the pan. After letting the mixture cool in the 11x7 pan there was no way to cut it into squares. I broke pieces off like peanut brittle. The end result is a bit like a vanilla Tootsie Roll & you can chew on one bite for several minutes. I wish I knew what went wrong as the cardamom & cashews were very nice flavors.
