I finally found a squash recipe that DH likes and enjoyed. This is so simple, revised to suit our taste, from Chef Micheal Smith, my favourite TV chef.
Directions:
1
Preheat oven to 350f degrees.
2
Cut squash in half, crossways, scrape out the seeds. Spray baking dish with veggie spray. Place skin side down, cut side up in baking dish.
3
Put 1 teaspoon of butter in each half of squash, sprinkle each half with salt and freshly ground pepper.
4
Fill each squash half with 1/2 cup applesauce, top with remaining butter and sprinkle again with salt and pepper.
5
Pour water around squash.
6
Roast on middle rack of oven for approximately 1 hour or until golden brown and caramalized.
Ratings & Reviews:
All I have to say is this recipe is fabulous and easy! The only addition I made was to sprinkle top with a touch of cinnamon & brown sugar.... DELICIOUS! This one had DH proclaiming at the table... "I love Gourds!" LOL! Thanks for a seasonal & delicious side dish, Derf!

I have a similar recipe except that it has a sprinkle of brown sugar and it states to garnish with currant jelly!

Wonderful recipe! I had two tiny acorns; they were so cute filled with applesauce! My homemade applesauce was a little tart, so I added some brown sugar, but not much. Easy and different recipe I will use often! Thanks!
