This recipe is a revised version of my Mom's Cooper Sharp Mac & Cheese recipe which I have been making for 25 years. But, I didn't have the correct ingredients for it, so this is how it came out. My DH and DD loved it so much better, that I now have my own version. LOL!

Today I indulged in this delicious mac and cheese quite heavily...to erase a bad day. Very effective. Made for Potluck Tag.

Love this! Such an unusual preparation for mac 'n cheese. I used low carb elbow macaroni and plain low-fat yogurt in place of the light cream because I was out of cream. I've never heard of Cooper sharp cheddar cheese, so I used a local brand that I like. The most difficult aspect of this recipe is not going for thirds! Thanks, Acadia! Made for Veggie Recipe Swap.
