Recipe by Aarsis Kitchen

It is the Indian version of a Spanish paella. One of my favorite comfort foods!

Well, I wish that I had read the entire recipe before I started making this, if I did, I would have seen that some of the ingredients: asafetida, cumin seeds, bay leaves, cloves and black pepper kernels, cashews and raisins, were not under the ingredients list that needed to be added. I made the pea pulao anyway, and it was great! I used brown rice instead of basmati rice, and I added cardamom to it, and I made it with butter chicken, palak paneer and naan bread, and it turned out delicious, my husband loved it and he hates brown rice! Next time I'm going to add the rest of the ingredients :)

Directions

  1. Method:.
  2. Wash and soak the rice for half hour. In a pan, heat ghee and add asafetida, cumin seeds, bay leaves, cloves and black pepper kernels, cashews and raisins. Now add water, along with coriander powder, garam masala, red chili powder and salt. Place a lid and let the broth come up to a boil. Now add rice and peas. Stir and place the lid back. Rice should be ready in 10-12 minutes. Do not stir often to avoid breaking of rice. Serve with Raita or Mint Chutney!
  3. Tips:.
  4. Do not over/under soak the rice Always take one part rice to two parts water for perfect rice cooking.
