I invented this to go with a lamb and gravy dish. Yams/sweet potatoes, like carrots, winter squashes and orange colored fruits are anti-oxidants that help to prevent cancer. Personally, I don't like the overly sweet versions of yams served on holidays. This is a super quick dish that goes well with meat and poultry every day!
- 2 tablespoons butter
- 3 scallions, chopped
- 2 (15 ounce) cans yams, drained and sliced into bite size pieces
- fresh ground pepper
- Microwave butter in a microwave safe dish, 30 seconds or until melted.
- Add scallions, yams and pepper.
- Stir gently, cover with plastic wrap and microwave at full power for 3-4 minutes or until hot.
So quick and easy! This is a great side dish. I didn't find canned yams at my store, but I found canned sweet potatoes. They were very good. I loved the contrast of the onion and pepper with the sweet potatoes. Served them with steaks and salad. Definitely will make again.
