This turned out just lovely. We really enjoyed it and it is very easy to make. I left out the oil and used veggie stock, due to my dietary requirements. I had to leave out the peas because it turns out we did not have any. I also roasted the quinoa in the pan before cooking. I learned this trick with quinoa a while back and it really ups the taste of it. I know that is a lot of changes, but really I still felt that it did not change the integrity of the recipe. I will make this again for sure. The lemon juice is what really makes this dish. Thank you for posting, would make it again for sure.
Very good dish to throw together. Had some rotisserie chicken chopped up and put about 2 cups in. Great main dish - hot and cold!
I served this with braised short ribs and it was a hit. A wonderful substitute for rice or noodles. I even forgot the lemon juice and it was still great. Thank you.
Very good. The lemon really makes it. I used less salt and oil and did 2 cups of broth, since I usually use the same ratio that is on the box.
For Quinoa this is the best I have found.
Yum! My family loves this! I make it just as directed, except we do leave out the peas as my son has a legume allergy. Very tasty!
This was delicious!!! I have never had quinoa before, and definitely never made it before. I did make a few changes. First I toasted the quinoa, then i fried up some chopped bacon and cooked the veggies in the drippings. I also added a clove of garlic, celery, and about 1/4 - 1/3 cup of chopped mushrooms. Also, I used a vegetable boullion cube in place of chicken stock, as that is what I had available. turned out sensational!!!!! Next time I think I'll add some red peppers or some other colorful veggies to it to give it some pop of color.
An aptly named recipe--I loved this! DH liked it, too, and he's a rice junkie! I am always looking for new ways to use quinoa. I used healthy shakes of oregano, garlic powder, and thyme for the spices. Thanks for posting!
This was my FIRST-EVER quinoa recipe (that I made--I've had quinoa before), and it went together so nicely! I used home-made chicken broth since we have about 40 quarts in our food room! *Made for PAC Spring 2007*
