This sandwich is based wholly on potato salad. Invented by my mother and me. Put it in the ice-box for lunch anywhere! Use any type of potato salad.

  1. Open bun and spread each side with mayonnaise. Place lettuce leaves and tomato slices on bottom half of bun. Scoop potato salad onto tomato, and gently spread toward edges of bun. Cover with top of bun.

Sounds interesting, and something I would try, but the carbs and cholesterol values are beyond my weekly limit, so i will have to pass.
