This is a great tasting pesto! Every once in a while for a change I will add a few flakes of red pepper. Try it you'll like it!
- 1⁄2 cup salted pistachios (shells removed)
- 2 cups fresh basil
- 1 cup good quality parmesan cheese
- 6 garlic cloves (peeled)
- olive oil
- In a food processor add all ingredients except olive oil.
- Pulse the mixture slowly adding olive oil until it is a pasty consistency or to your liking.
- Serve as you would regular pesto!
