A classic British No-Cook pickle for your sandwiches and cheese board! Remember Pan Yan pickle? It was a firm favourite in our home and my dad loved it slathered on top of cheese on toast! Now sadly discontinued, this fabulous British pickle with the catchy name is easy to make! I have fiddled around and recreated this recipe, and I am delighted with the results even though I say so myself. Lighter and with more "tang" then Branston pickle, I love it in sandwiches. Adjust the curry powder to your own tastes.

It may be very nice, BUT...... The original contained 'Rutabaga', which is yellow swede, carrot, onion, and caramel, none of which are listed above, so the end result is very different. I have just made batch including these 'missing' ingredients, and from memory I think I am getting quite close to how I remember it. Gorgeous with cheese, cold meats ,curries, sausages, and even just on its own in a sandwich !
- 453.59 g bramley apple, peeled, cored and minced
- 453.59 g dates, minced
- 453.59 g sultana, minced
- 354.89 ml malt vinegar
- 453.59 g soft brown sugar
- 9.85-14.78 ml Madras curry powder
- salt and pepper
