  • Preheat oven to 375°F.
  • In a small bowl, combine flour, baking powder, baking soda and salt; set aside.
  • In a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy.
  • Beat in eggs.
  • Gradually add flour mixture; mix well.
  • Stir in oatmeal, coconut, and Rice Krispie cereal; mix well.
  • Roll into small balls and flatten with hand.
  • Bake on ungreased cookie sheets for 10-12 minutes or till light brown.

  3. Where have these been all my life? Sooo soo good. They aren’t safe in front of me. I did halfback butter half shortening but everything’s else exactly as written and they are so damn goodbye I’m thinking of making more!
     
  4. Very good cookie, thick and chewy! I scaled down the recipe to make a dozen cookies and added chocolate chunks.
     
  5. Something went awry with the recipe for me. I cut the recipe in half. I used half butter and half Crisco. I bought all ingredients this morning, except the Crisco, which was in the pantry and I couldn’t find a date on. The cookies spread into malignant lakes and baked twice as long as the stated time. The look was oily. The taste was oily and not very sweet (I did use sweetened coconut). I wish I knew what went wrong.

  2. These are really good if you add orange zest
     
  3. I accidentally used bread flour for these today and assumed the dough was ruined. Baked them up and they were wonderful! Chewy, soft, with slightly crips edges. My husband suggested I make with bread flour from now on.
     
  4. These are very tasty and easy to make. I made them with the kids I babysit and they thought they were great too! We used 1 cup of chocolate chips in place of the coconut and Special K instead of Rice Krispies. Those were the only adjustments we made. We got 51 cookies out of the recipe. Thanks!
     
  5. I suggest 1 cup of Crisco instead of 1 cup of butter. Also, I usually get 3 dozen cookies out of this recipe. Be sure not to squish the dough into a ball; you want the balls to almost fall apart prior to baking.
