  • Mix first 7 ingredients together.
  • Toss in remaining ingredients except 1 tablespoon bacon and salt and pepper.
  • Mix well.
  • Taste to see if you need to add salt and pepper.
  • I myself like lots of pepper.
  • Top with bacon bits.
  • Chill& Serve.

  1. A hose under the sink broke and started flooding the kitchen when I was in the middle of making this. :( That's my excuse for totally forgetting to add the black beans. Didn't seem to matter, though, since everybody agreed it was sensational. I used 3 chipotles, seeds and all, and the heat level was actually pretty mild. Thanks for a really top-notch recipe, Rita! Update: Six years and a whole lot of bowls of potato salad later, I don't think I've ever served this to anyone who didn't rave. So many people told me at a cookout last weekend that it was THE BEST they'd ever tasted that I just had to thank you again for sharing this wonderful dish.

Made a 1/2 recipe - used fire-roasted jarred red peppers, a fresh sweet diced Vidalia onion, 3 stalks diced celery, 3/4 cup diced boneless smoked ham hock (look for it at Foodlion supermarkets by the ham - comes in 1-2 lb vacuum-sealed packages - it's GOOD!) & 3 deseeded chipotles in adobo sauce (that I blended in the mayo). I did leave out the sugar - never missed it. Man, this is a great recipe! It goes into the keeper file! Thanks Rita!

  5. I can't believe I never rated this! I made this several years ago and thought it was delish! I did omit the black beans. But I need to make this again soon, and I will add them in this time. I love trying all different kinds of potato salads. This one is definitely unique! It is on the top of our favorite potato salads! Thanks for the great recipe!

Tweaks

  1. Instead of scallions I used red onion finely diced in my cuisinart food prep. I also made extra dressing and let this sit over night then added my crumbled bacon to garnish. Fabulous, the family loved it with BBQ chicken.
     
  2. The BEST potato salad. I left out the raw veggies (to make it truly a "man's"--haha), subbed dried cilantro for fresh, and also left out the beans. What I was left with was totally yummy. The best bites were the ones with chipotles (I used the full amount) and bacon, so I may add a bit more of each next time. I had trouble stopping taking bites as I put this away...I didn't even eat my main course at dinner, just 2 heaping helpings of this!! :) Definitely worth the trips to 2 different groceries to find chipotles in adobo! YUMMY! Update the next morning: I had 2-3 heaping servings leftover and I'm ashamed to say I ate them all for breakfast this morning. Still good.
     
  3. I'll have to stop eating this now to make sure there's some left for dinner tonight. It's addictive. I used what I had in the house: green bell pepper instead of red, no scallions, no celery, dried parsley, diced green chiles with some garlic powder and about a 1/4 teaspoon of chipotle powder added, no bacon; everything else as written. Wonderful spicy salad. A person could become famous for making a salad like this. Of course it might not be to the taste of some people, but they're sure missing out.
     
  4. This recipe is definitely a keeper! I didn't have any black beans so I used pinto beans, and I used a green pepper instead of a red pepper. We really enjoyed it - thanks!
