ingredients

  • 2 cucumbers, peeled and sliced into rounds
  • 1 (1 ounce) envelope Good Seasons Italian dressing
  • 1 loaf miniature party rye rounds (can be found usually in deli section of supermarket) or 1 loaf pumpernickel rounds (can be found usually in deli section of supermarket)
  • cream cheese

directions

  • Spread cream cheese onto bread slices (don't skimp but don't over do it).
  • Place cucumber round on top of spread.
  • Add a pinch of dressing mix to the top of cucumber and sprinkle.

  2. Haven't tried yet but why not mix the Italian salad dressing mix with the cream cheese first, then spread on rye and top with cucumber? Just a thought/
     
  3. I would suggest mixing the entire package of seasoning mix into the cream cheese before spreading on the bread. I've been making them that way for years and they are delicious and flavorful.
     
  4. Took these to a Christmas party yesterday and they were the first appetizer to disappear!! Everyone loved them. I also mixed the dressing in with the Philly (and I used 1/3 reduced fat and low sodium dressing) and then sprinkled a bit of paprika on top for the red/green color. Pretty AND tasty! I will definitely make these again!
     
  5. I felt like these could be more flavorful, but they went over well at a party I hosted. I would maybe try a flavored cream cheese in addition to sprinkling with the Italian dressing--or perhaps mixing the dressing with the cream cheese, and then sprinkling with some other colorful herb. Good quick appetizer though, I will make again with variations. Thanks for posting!

  1. Couldn't find the little rye rounds but found little toasts in the deli section, so I just used those instead and it was still great!
     
  2. I have been making these since I was a young boy... A way to add a real punch is to mix Thousand Island with the cream cheese instead of the suggested Italian dressing mix. It gives it a sweet and tangy flavor that is hard to resist!
     
  3. This is so simple and so refreshing especially on a "HOT' day. I did take a couple of liberties. Instead of Rye bread rounds I used "RainCoast Cranberry/HazelnutCrisps" topped with Garden fresh cream cheese Then a slice of cucumber with a little touch of parsley on top. Although I changed the recipe a bit I didn't think that it warranted a new recipe. They were devoured- Thanks, yours was just the base recipe that I needed

Welcome! I joined this website in 2001, as a new wife and Mom of a 1 y/o and I was 28 yrs old and did not know about cooking. I found this website cause I searched the web and wanted to find a good recipe for carrots! I found that recipe and so much more here over the years. I learned so much from this website and opened up my eyes to other recipes. I now am 46 y/o. I am now divorced and my then 1 y/o son is now a Marine. I have a wonderful man in my life that loves and appreciates my cooking and I thank this site for all of its help. I still come here for recipes.
