  • Preheat oven to 375 degrees.
  • Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
  • Line regular sized muffin pans or cupcake tins with paper baking cups and place a vanilla wafer in the bottom of each cup.
  • Fill the cups 2/3 full of cream cheese mixture.
  • Bake for 15 to 20 minutes or until set.
  • When warm, top each with a tablespoon of cherry filling.
  • Chill in refrigerator.

  1. My bottoms came out a little burned. What did I do wrong?? 375 for 15 minutes. They were not on the bottom shelf. I put the on the 3rd rack to prevent from burning.

  2. These are fantastic! I’m a die-hard fan for anything cheesecake. I loved the addition of lemon juice as it always seems to balance flavors out.   3. Easy to make and yummy to eat. Used light cream cheese, splenda and lite cherry pie filling. No one knew they were eating a light dessert.
     
  4. I have used this recipe for years and they are always wonderful. My husband is diabetic so I make them with Splenda blend. I think the texture is slightly better with all sugar but he likes these.

Instead of cherry filling, I used a can of whole berry cranberry sauce,just melted it slightly and added a little Grand Marnier, these mini desserts are great to serve at Thanksgiving or Christmas !!! Update Jan/2010, I prepared these little cheesecakes for a luncheon recently, I used various toppings, as usual they were a hit!!

Tweaks

  1. I uses vanilla and chocolate Oreo Thins for the crust because vanilla wafers were nowhere to be found. After baking the filling, I topped the vanilla with cherry and the chocolate with blueberry. I have made these twice now, the second time I made 36 for a Christmas function. Today I am make 24 for. family reunion. They are always a hit, I never take any home. I have blue and red liners so it looks nice on a tray. B.
     
  2. I think the sugar is supposed to be 3/4 cup, not 1/4. These were not sweet enough!!! All other recipes call for 3/4 cup!
