  • Heat oil in heavy large saucepan over medium-high heat.
  • Add garlic, chili and cumin and sauté 30 seconds.
  • Add beans and broth and cook 5 minutes, stirring occasionally. Coarsely mash beans with potato masher.
  • Continue boiling until thick, stirring frequently, about 20 minutes. Season to taste with lime juice, salt and pepper. Transfer to bowl. Sprinkle with cilantro and serve.
  • I add the monterey jack cheese on top and microwave for 2 minutes to melt the cheese.

  1. So tasty! My husband loved it. The lime juice is a must and serving it with additional slices of lime is a good idea. I didn't have a jalapeno, so I added ortega diced chiles. Will definitely make this again.
     
  2. Just a quick note. Whenever making beans, and you want to thicken the stock but not have "mash potato style" beans, this is what you can do. Take about an 1/8 of your beans. Add a little water or your stock. Mash those separately from your other beans. Add these to your pot. You can always add more depending on how thick you would like your beans. Also, if you add small diced onions, to saute, that really kicks up the flavor a notch.
     
  3. Fantastic Beans! I have made this recipe many times since 02/2009. However, to give it that extra wow factor I add 1/2 chopped sweet onion, 1 packet of Sazon Goya Mexican seasoning packet and I use low sodium chicken broth. Very authentic.
     
  4. Great and simple bean recipe! The only change I made was using jalapenos in a jar instead of a fresh one. I don't think I'll ever eat traditional refried beans again! Also, it's great cold (or warm) with tortilla chips as a bean dip.
     
  5. So easy and delicious! I made this for a party and everyone raved about it. Goes well with mexcian dishes. I omitted the jalapeno and it still had a great taste. It sounds too easy and simple but is actually very good and tastes like you went to a lot of trouble! I will definitely make this again.

Tweaks

  1. I substituted low fat sour cream dollop with the jack cheese and topped with chopped yellow onion! Less calories and super yummy. Lime really added.
     
  2. This dish was easy and delicious. I substituted pinto beans for the black beans since my husband and I like them better. We served it with fish tacos and fresh pico de gallo from this site. Although I got worried that the liquid wouldn't cook down, it turned out just fine. Thanks for sharing!
