Hellmann's the Original Potato Salad

"A longtime favorite of my family. We don't have an outdoor summer gathering without this and Hellmann's Classic Pasta Salad. Can't go wrong with these delicious recipes. FYI: because of the mayo content, we put the bowl of salad into a slightly larger-sized bowl filled halfway with ice to keep the salads cold and fresh."

  • In 4-quart saucepot, cover potatoes with water; bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool slightly.
  • In large bowl, combine Hellmann's Mayonnaise, vinegar, salt, sugar and pepper. Add potatoes, celery, onion and eggs and toss gently.
  • Serve chilled or at room temperature.

  1. This is absolutely delicious! I would not do a thing differently! I chopped the celery on the small side. I also used vidalia onion and soaked it in water to remove the sharp bite. After chilling the salad overnight, for an extra pretty salad, add a third hard-boiled egg, slice in nice rounds and add it on top for garnish before serving. Sprinkle with a little paprika.
     
  2. Granny makes this for holidays and gave me her recipe but could not give me any measurements because shes old school and just throws it together. This one seemed the closest to hers and it worked out great for me so I had something to go off of measurement wise! Granny adds mustard, bacon, dill relish, paprika, and green olives.
     
  3. I've been making this for years. Try a few tsps. of dill pickle juice instead of vinegar (even if you don't like pickles in your food. I don't)
     
  4. I got this recipe from the Hellmann's website last night to make with some dutch oven smoked chicken. It was fantastic!<br/>I did add a drizzle more vinegar and a sprinkle more sugar because I thought it needed a little more zip. I also didn't have celery on hand, but I will add it next time! Definitely include the hard boiled eggs - they take it to the next level :o)
     
  5. This is the same recipe my family has made for as long as I can remember. (I'm 77) Love it! We like to use White Rose potatoes, boiled, cooled, then skinned. Good with skins on too. I sometimes use dill pickle juice for the vinegar. Have never written it down, so great to see it posted.

Tweaks

  1. My mother made this potato salad when I was growing up. I never knew the source of the recipe until years later when I discovered it on a jar of Best Foods mayonnaise. The only tweaks she made were that she left out the vinegar and added sweet pickles. This is my all time favorite potato salad. Nothing else compares.

  3. This is the same recipe my Mom used to make. I haven't had this in a long time and I was craving it. I used bread and butter pickles instead of the celery by personal choice. Made for PAC 2011 Spring.
