    Prep Time: 0 mins

    Total Time: 5 mins

    1. 1 Saute mushroom about 5 minutes, till cooked. Place in small bowl.
    2. 2 Beat eggs with fork until light and lemon colored.
    3. 3 Stir in green onion, mushrooms, and avocado.
    4. 4 Add salt and pepper to taste.
    5. 5 Pour egg mixture into oiled 12" skillet; cook until bottom of omelet is set, 3-5 minutes.
    6. 6 Flip omelet over in pan; continue to cook until set.
    7. 7 Cut into pie-shaped wedges and serve.

      I tweeked this recipe a tad by adding chopped up tomato and loved it. The rest of the folks thought it was "just ok".

      Sharon, this is fantastic! I didn't dice the avocado, cuz it was really soft; just sliced it. Delicious mid-morning brunch for lil ole me! YUM!

      I feel selfish & indulgent, but can that be our little secret? I made early morning coffee & spent time w/DH while he ate his cereal & toast b4 he left for work. Then I went straight to my kitchen & made a single serving of this omelette just for me! I even added bacon! Now how indulgent is that? This recipe was a sure-fire winner! How could it not be when you have avocado, mushrooms, cheese, bacon & an appetite? Great recipe, Sharon! Thx for sharing it w/us.

      This is one of the best egg dishes I have ever had. I used egg beaters; also used a little onion powder rather than buy a whole bunch of green onions for just one. I skipped the salt because eggbeaters has them in it, but used freshly ground mixed peppercorns. Oh, it was SO good. Thank you!

      Awesome breakfast! The avocado keeps this omelet nice and moist, but not soggy. I used sharp white cheddar and it brought out the flavours nicely. Thanks Sharon, it was delicious!
