directions
- Rub butter into flour.
- Stir in baking powder.
- In a separate bowl, stir sugar into the chopped apples and raisins.
- Add egg and milk and mix gently to a firm sticky dough, add sugared apple pieces & raisins and mix again.
- Scrape into greased or buttered 8x8inch cake pan. Wet hands and press mixture into pan.
- Bake for 30minutes at 330F, 165°C.

I live in Dorset so I get to try various types of this cake. Try sultanas rather than raisins and add a rounded teaspoon of mixed spice* and the zest of half a lemon. To stop the apple browning put the cubed apple in a polythene bag with a little lemon juice and shake up. Drain any surplus juice before adding it to the cake mix. *not sure if mixed spice is the same in USA as in the UK. In the UK its a mixture of ground cinnamon, cloves, mace, nutmeg, coriander & allspice.

I am in heaven LOL I had a recipe very similar to this many years ago but lost it. Mine didn't have raisens so when I made your recipe I did leave them out as well. To those who try this recipe the mixture is more like a scone mix, not cake batter, so that is why you have to pat it out into the tin. Thanks so much for posting:)

I had a little difficulty making this but the flavor was good and DH and I both enjoyed eating it. I added 1 teaspoon cinnamon to the flour-baking powder mixture before cutting in the butter. I used 2 Granny Smith apples and the weight when peeled and cored came to 215g. I used my scale to weigh everything. When I added the egg-milk mixture I couldn't get it to come together, very crumbly so I added another 2 tablespoons milk. It still didn't come together but I added the apple sugar mixture anyway and was able to smoosh it together using my hands. I patted in into the baking dish and pressed it down and baked at 350*F for 35 minutes. It had good flavor. Perhaps it would have been easier to mix in an elecric mixer.
