Chez Sovan Cambodian Beef Sticks

"I haven't tried these yet but can't wait to. Found the recipe on another site its from Sovan Boun Thuy, owner Chez Sovan. Ginger can be substituted for galangal if you cant find it. Time does not include the 3 hr marinade. Just a note, i would not omit the kiwi because it has a tenderising effect on meat and will add a subtle flavor that doesnt disturb even if it is not your favorite fruit."

  • Slice beef on diagonal into thin strips, 1/8- to 1/4-inch thick.
  • Place lemongrass, lime zest, garlic, turmeric and galangal in food processor or blender and grind to paste. Stir in 3 tablespoons oil. Place 2 tablespoons of spice mixture in bowl large enough to marinate meat. Add oyster sauce, sugar and paprika. Mix and taste, correcting seasoning to your preference. Cut kiwi in half. Remove flesh from one half and mash to a paste. Stir into marinade. Add beef strips; stir. Cover and refrigerate 3 hours.
  • Start coals and burn until coals begin to glow or turn gas grill to medium heat. Thread beef onto skewers. Grill until well browned, 5-6 minutes per side.
  • Serves 4.

  1. What a wonderful recipe... Tritip is not a popular cut around here, I usually have to drive about 20 miles roasted find it. Instead I used boneless short rib...perfect. You can cut these in half length-wise and skewer or just leave whole and grill. I am always looking for a tasty and economical alternative to lunch meat for my husband who likes to carry his lunch. I make a batch of this, give him a bag of 5 rolls, 5 pieces of fruit and some greens and he has a tremendous, healthy lunch for about $2.50 a day. This is one tasty recipe. Thanks for sharing.
     
  2. Great beef sticks!!! I made this using top sirloin as I couldn't find tri-tip beef. We also put a skewer of onions on the grill with the beef and loved the combination of the two!! Great combination of flavors going on in this marinade with the kiwi, lemongrass, ginger and oyster sauce!!! I did use the organic tube versions for the lemongrass and the ginger which really made this easy to get together. Thanks for sharing the recipe. Made for Holiday Tag Game.
     
  3. My husband loved this and I thought it was very good. I might like this a little spicier and would use some red pepper next time in lieu of paprika. I was really nice having something from an utterly warm climate in winter's cold here. One of the reasons I brave the cold to grill outside! It warms the heart. Thanks for posting!

  5. Utterly outstanding! I wish I could give more than 5 stars. They are savory and a tiny bit sweet...and crispy and altogether umami. I certainly will be making this again and again.

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
