- 1 (18 ounce) package white cake mix or (18 ounce) package French vanilla cake mix
- 1 (21 ounce) can cherry pie filling
- 2 eggs
- 2⁄3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2⁄3 cup chopped almonds
directions
- Preheat oven to 350 degrees.
- Grease and flour a 13 x 9 pan.
- Mix cherry pie filling and cake mix together by hand.
- Add rest of ingredients and stir by hand until well mixed.
- Pour into prepared pan.
- Bake for 40-50 minutes or until top is golden brown.
- I usually do not frost this cake, I dust it with confectioners sugar.

Pretty good cake..and I think it tasted better the 2nd day! I used a yellow cake mix and also added a package of cherry koolaid (no sugar) to add more cherry zing! It definately intensified the color! The cake itself was very moist and I liked the added bits of cherry throughtout the cake! I baked it in a bundt pan, adding a bit of extra time (5-10, do the toothpick test) Also, I nuked a tub of vanilla frosting to pouring consistancy and drizzled about half of that on top of the cake. I liked it better with just that bit of frosting. My in law was very happy with it (but then again, would he really say it was terrible when I went to all the trouble to make it for father's day?!)
