Bisquick Impossible Tuna Melt Pie

  • Preheat oven to 400 degrees.
  • Grease baking dish.
  • Cook and stir onions and butter in skillet over low heat until onions are light brown. Sprinkle tuna, 1 cup of the cheese and the onions in baking dish.
  • Beat eggs, milk, baking mix, salt and pepper until well blended.
  • Pour into baking dish.
  • Bake 25 minutes. Top with remaining cheese to within 1 inch from edge. Bake 5 to 8 minutes longer or until knife inserted in center comes out clean. The pie can be done even though some melted cheese adheres to knife.

  1. This is a nice change from my usual tuna recipes. I added mixed veggies and used raw onions, my homemade bisquick (1/2 whole wheat) and sharp cheddar cheese. I did not measure the salt and think I did not use enough, because I thought it needed a bit more. I made half the recipe, perfect for dinner for two with a side salad and maybe leftovers for one for lunch.

  4. I've always like the impossible pies and to this one I added a half cup of frozen peas and topped with one thinly sliced green onion. Made for "New Kids on the Block", a tag game.
     
  5. This was very good! I am giving it 5 stars because it was good and also because I made a few adjustments and it's not fair to dock the stars, IMHO, if I didn't make it exactly as written. I will post my tweaks under that category but for ease of the reader, I will also list them here. I used Gluten Free Bisquick baking mix, full fat coconut milk (in the carton, no fillers), added some chopped celery, chopped pre-cooked mushrooms, garlic powder, and used raw dairy cheese that I hand shredded. This was just the kind of 'tuna casserole' I was looking for and the adjustments were for dietary needs/purposes. Thank you for the outline of a successful recipe. It is a very forgiving format and will still taste delicious even with significant ingredient swaps.
