While broth is coming to a boil snap the asparagus at it's weakest point to remove the tough ends. Then cut into bite sized pieces. When broth comes to a boil, add the cup of Israeli couscous. Let it boil uncovered for 5 minutes. Add asparagus and continue boiling 3 minutes. Remove from heat. Add desired amount of freshly grated parmesan cheese to each bowl or the entire pot.

To make it the consistency of pasta, use only 2 cups broth.
What on earth is Israeli Couscous? Not available in Denmark, so I used just plain old couscous from my neighborhood supermarket and it worked out just fine. I love asparagus and any new way of using them is also fine.

Perfect for me since what I had on hand was fresh asparagus and israeli couscous. I added a Tbsp of parsley pesto I had on hand and it was awesome. So delicious I burned my tongue because I wasn't patient enough to let it cool down a bit.
