      This recipe is in a PTA cookbook my mother had from Tacaoma WA that was published in the 1960's We always double the recipe! The only change we make is to omit the bacon; I think it makes the casserole too greasy. The flavor is even better reheated the next day!

      this was amazing! I fed five of my starving engineer friends plus myself on this and some cheesy baked potatoes. the bacon really added some pop to the flavor, though in the future I would probably chop it up to spread the taste across the whole casserole.

      Really nice casserole and so easy to put this together. I used a large can of corn, omitted the red pepper and turkey bacon for the top. Only seasoned with salt for one layer but next time would add it to the second layer too. My rice was a little overdone but I dont think I added enough water. I was a bit worried about the ground chuck leaving the casserole greasy but it cooked well and had a really good flavor. A salad and fresh bread would make this comfort food a complete meal!
