This recipe was on the President's Choice website to serve with Beer and Smokin’ Stampede BBQ Ribs. Simple with minimal effort - perfect! I didn't count the salt as an ingredient. Please note that it states you need 2 hours for the onions to soften. I made this recipe for a work event and I greatly increased the amount of coleslaw mix that it works with. Enjoy!

Ingredients Nutrition

  • 1 sweet onions (the size of the onion depends on how much you like onion) or 1 red onion, cut in half lengthwise and thinly sliced (the size of the onion depends on how much you like onion)
  • 12 cup seasoned rice vinegar
  • 12 teaspoon salt
  • 1 cup mayonnaise
  • 2 -3 lbs coleslaw mix

Directions

  1. Soak onion in vinegar and salt for two hours or until onion is softened.
  2. Stir in 1 cup mayonnaise.
  3. Add coleslaw mix; toss to coat.
  4. Serve immediately.
