  1. Preheat oven to 375 degrees F.
  2. Mix all dry ingredients in a medium bowl.
  3. Mix all wet ingredients in a different bowl.
  4. Gently pour all dry ingredients into the bowl with the wet ingredients.
  5. Whisk together using about 8 strokes. (do not over mix).
  6. Spoon batter out into greased or lined mini muffin tin.
  7. Bake at 375 degrees for 13-15 min or until tops are pale golden brown.
