This is a great recipe. I thought for taste it probably deserved 4.5 stars, but for convenience and nutrition it's a 5 star all the way. My DH and I have been trying to eat healthier and shed a few pounds and this recipe gave me a really good tasting and filling dinner for less than 300 calories. I used fire roasted tomatoes instead of regular diced tomatoes and 100 calorie multigrain tortillas with 1/2 oz. of cheddar and lots of lettuce. I also used fat free yogurt instead of sour cream with a little salsa for garnish. This recipe uses items I almost always have on hand, is inexpensive to make and doesn't taste like diet food--what could be better than that!? Thanks for posting peachy pie.

  1. Heat the oil in a large saucepan and saute onion, garlic, chilli and cumin until fragrant and soft.
  2. Add bell pepper and mushrooms. Saute until soft.
  3. Add both types of beans and the tomatoes. Bring to the boil then reduce heat to low and simmer for 15-20 minutes.
  4. Serve with warm tortillas and other fillings at the table for people to wrap into burritos.
