"As a college student, I try to utilize my leftovers in various ways. This idea was great because I had tomatoes left over from tacos, which was turned into "Mom's Bruschetta" http://www.food.com/recipe/moms-bruschetta-434144 and then had it the next day as a great snack. Also would be a fantastic appetizer."
