      This dip turned out nice and creamy and tasted good. I used part of a jar of queso dip for the queso melting cheese and bacon bits for the bacon. It would be helpful to have amounts on the mayonnaise and cream cheese, but I just guessed and used about 1/2 cup mayo and 8 oz. light cream cheese.

      I love spinach and artichoke hearts.... and most of the other ingredients so my expectations were extremely high.... and I was certainly not disappointed. I omitted the red pepper flakes (zero tolerance of anything remotely hot and spicy) and used feta in place of the queso fresco. A wonderfully delicious dip which was so very quick and easy to make: I made mine in the oven and we enjoyed it with slices of crispy ciabatta! A recipe this quick to make and this delicious is one I'll certainly be making again. Thanks for sharing it!

      I just love spinach and artichoke dip and this was one of my favorites. The bacon really gave this dip a wonderful smokey flavor and the red pepper flakes was just the right amount of heat. This was my first experience at using queso fresco and I really enjoyed it. Thanks so much for sharing.

      Oh my goodness, ding dong the bell has rung. So good, so enticing, so fresh. good! The afternoon had turned cloudy. Not from any rain, or even clouds for that matter. It was cloudy because we were trying to "hook up" the big garden tiller. Corn, lima's, melons, and second round of spinach needed to planted and quickly at that. We needed something quick, fancy, and so delicious that we could forget those darn clouds. The only change I made was; the use of freah spinach from garden, and for half I top with fresh crab meat and after baking, ran through broiler at last minute to give it and overall gooey delicious quality. Other then those small changes, I followed this exactly and this dish was gone in no time flat. This bubbled about 25 minutes, then grabbing it from the oven, threw the big lumps of crabmeat on top. Oh yum bacon! Thanks 2Bleu, absolutely delish!

      I loved this dip! I quartered the ingredients, except for the spinach, used red pepper flakes. I was going to use veggie bacon,but managed to burn it to a crisp(literally!) when I left the room(ahem) for just a minute(which turned into 10). I also just realized I forgot to put in the queso(and I just bought some today for that purpose!). It was still great,despite the booboos. Thanks you two, this was my supper served with sun chips. :lol:
