Totally worth the effort! I made the batter and filling the night before, let them sit in the fridge then cooked them up the next morning. Really good with the sour cream, but I did top mine with some sauteed bananas. Made for PRMR.

I was tempted to go out & buy some premade crepes, but am so glad I didn't ~ It always a great feeling when you successfully complete a recipe like this from scratch, I think, with all the complements going to the cook as well as to the one whose recipe it is! I was very happily satisfied with the combo of cheeses in the filling, & finished blintzes are OUTSTANDING! Definitely a recipe I'll keep around ~ Thanks for sharing it!
