1900 Park Fare Vanilla Sauce (Disney)

Ingredients:

Servings: 10

• 3 egg yolks
• 4 ounces sugar
• 1/2 vanilla bean, split lengthwise
• 1 cup milk
• 1 cup heavy cream

Directions:

1. In a saucepan, combine milk, cream, and vanilla bean. Bring to boil.
2. In a mixing bowl, combine egg yolks and sugar.
3. Slowly pour boiled milk and cream in egg yolk mixture, stirring constantly.
4. Return to heat and cook until thick, stirring constantly. Do not boil.
5. Strain. Chill in an ice bath.

Wonderful recipe!! Check out a video on line about making a creme anglaise so that you don't scramble the eggs. This sauce can be made a day ahead and chilled in the fridge.
