1824 Tomati Catsup:the Old Fashoned Way

ingredients
- 9 -10 lbs tomatoes
- 3 large onions
- 1⁄2 cup kosher salt
- 2 tablespoons cloves, ground
- 2 tablespoons allspice, ground
- 2 tablespoons black pepper
- 1 tablespoon cayenne pepper
directions
- gather the tomatoes wash & stem them.
- cut them roughly into quarters.
- peel & slice the onions & place both tomatoes and onions,in layers,in a large stockpot.
- sprinkle 3 tablespoons on the salt over the tomatoes, & over low heat, without any water whatsoever stir infrequently while increasing the heat to low-medium as the tomatoes sweat out their juicesfor a hour.
- remove from heat & allow the tomatoes to cool enough to handle.
- strain the tomatoes into a clean pan & return to stove top.
- add the cloves,allspice, black pepper & cayenne & bring to a simmer.
- stir regurally for a hour.
- remove & allow to cool.
- adjust seasonings to taste,then bottle in jars with sealable lids & refrigerate until needed.
