15-Minute Microwaved Rice

ingredients
- 1 cup basmati rice
- 1 3⁄4 cups chicken broth
- salt and pepper
directions
- Place the rice in a strainer and rinse it well under cold running water.
- Combine the rice and broth in a microwave-safe bowl.
- Season with salt and pepper.
- Place the bowl in the oven and microwave on high power for about 15 minutes.
- Stir; cover and let rest for 10 minutes.

This works very well. I made it just as ask and got very good rice. The only difference was that I used beef broth (I had a beef pot roast). This method is very handy when you have several pots on the stove top. I made 3 servings and the two guys wiped it out to the last grain. I'm sorry that there are no pix but these two were like vultures circling in the kitchen!

The difficulty with microwave cooking is that everyone's microwave is different--I'm not sure if my trouble was in my microwave or in the recipe. Fast and easy definitely describes this dish and the flavor was good too. But the rice turned out decidedly undercooked. Not so crunchy as to be inedible, but definitely too hard, even though all the broth had been absorbed. I followed the directions exactly, only I wasn't sure if I was supposed to microwave the rice covered or uncovered. It seemed like uncovered so that is what I did. I'm definitely going to try this again with more liquid. I was really afraid this would make a disasterous mess in the microwave, but it didn't at all.

Canadian girl that loves to cook for herself and for everyone around her!! I always enjoyed cooking but more so since I started taking better care of myself by eating healthier food (I am a Weight Watchers Lifetime member!). I still love my chocolate though!
