I like bean soups since they're cheap, easy to make, and healthy comfort food. I've never made 15 bean soup before this, but I loved the way this one turned out so I had to post it so I wouldn't forget. It ended up being a combination of things I had around and wanted/needed to get rid of...either way, this is yummy! I didn't add the meat off the bone, but if you like it...feel free! Great for cozying up when it's cold or watching football (or hockey!).

What a great comfort meal? I used the quick soak method with a bag of 16 bean soup mix that came with a seasoning packet. For the veggies, I chopped up what was left of a veggie tray that had carrots, broccoli, celery and tomatoes. I assumed the seasoning salt in the ingredients list was separate from the seasoning packet that came with the beans so I added the seasoning salt in the beginning with the rest of the ingredients and since the instructions on the bag of beans said not to add the packet until the last hour, for the crock-pot I added the packet about 2 hours before it was done. Instead of a ham hock or ham bone, I added a sliced up smoked beef sausage at the same time that I added the packet of seasoning. Served with cornbread. Excellent!!
- 1 (16 -20 ounce) bagdried 15 bean mix, with seasoning pack
- 1 (8 ounce) can tomato sauce
- 3 ham hocks or 1 meaty ham bone
- 1 (16 ounce) can diced tomatoes
- 1⁄2 head garlic, minced
- 1 onion, chopped
- 3 stalks celery, chopped
- 3 carrots, chopped
- 2 chicken bouillon cubes
- 6 cups water
- 2 bay leaves
- seasoning salt
- pepper, to taste

- Presoak beans overnight, or boil them according to package.
- Combine all in crockpot.
- Cook on high 6-8 hours, or until beans are soft.
- Remove ham hocks/bone (strip meat off and add back to soup if desired) and bay leaves.
- Could also be done on the stove top by simmering all on low for 3-4 hours (until beans soften).
