These were given to me by a co-worker. She’d made them for a fundraiser and I asked her for the recipe. She added toffee bits to the cookies. Delicious!

  1. Mix in order given. Drop by teaspoonfuls onto baking sheet. Bake at 350° for 12-15 minutes.

Nice change in pace for our family - normally we have soft cookies and these were crispy. Some of the cookies ended up being packaged with a few muffins - which made them softer and these were really delicious!!

Easy to put together and yet they are very good. They are quite different. My family kept asking whats in it? :) You can barely taste the coconut for those that don't like coconut. The cookies are slightly crispy on the edge and a bit chewy in the center. Keeper!!

According to my family and friends these should be called 100 Excellent cookies! They have a light texture, the cookie was soft inside but a little bit of crisp as you bite into it (I think from the C of T) I made them with butter instead of marg. and did add the toffee bits. My DD and I decided they would be really good with white chocolate chips and macadamia nuts. Another good thing - they couldn't be any simpler and quicker to mix up - I beat the first 9 ingredients in the mixer then hand stirred in the rest, a good one for kids to help with.
