Absolutely yummy! It's loaded with beans and veggies, so it's super hearty and filling, too. I made this as written with 8 oz of smoked turkey and skipped the ham hock. I agree that it's fine without the ham hock. I added a few drops of liquid hickory smoke just to get the flavor. This makes a nice big pot of soup and it's even better when reheated the next day. Out of this world. I got a 10 bean mix from the bulk aisle at Sprouts Farmers Market and had no idea what to do with it. I'm so glad I found this recipe. It was delicious and filling. I made the following alterations: instead of fresh tomatoes, I used a can of diced tomatoes (all I had, and it was great), I used 2 fresh garlic cloves, I used only one 1 qt container of chicken stock then added about an equal amount of water, and added 1 tsp salt. I completely eliminated the ham hock and turkey. I only had one green bell pepper. I processed all veggies in the food processor then poured into the bean pot. This gave the soup such a thick, hearty consistency. Served with cheesy mexican cornbread. YUM!
Skipping the smoked ham hock and smoked turkey. Just adding Apple wood liquid smoke with chorizo. My family loves it.
Delicious soup! I also skipped the ham hock and found the flavor to be wonderful without it. It's a surprisingly simple soup that packs big flavor. Bravo!
