"I've made these for a long time. These Italian eggplant balls are a great substitute for meatballs. Use them just like meatballs, in sauces, in recipes, as a side dish, etc. They can be a vegetarian substitution for many dishes. I like these best fried because I like them crispy. You could bake them instead. They go great "parmesan style"..."

"This is a hearty Italian dish from my Great Grandmother who was from Sicily. We used to make this once a month. Don't worry about frying the eggplant it's fried in olive oil and my Papa always said that Olive oil was the best thing for you (he also used to say to shove garlic cloves up your nose if you have a cold, but that's another story)...."

"Measure and chop most of the ingredients the night before, and the next day it'll take you just a few minutes to have everything in the slow cooker.

Before, when I didn't care for sausage, I would substitute ground beef. Also, if you don't like eggplant, you can increase the amount of mushrooms or zucchini.

"I made ratatouille for my DIL the other night. She mentioned her mum used to make it with meatballs in it so this is my take on that recipe. I got further inspiration from **Mandy**s Baked Vegetable Ratatouille. We usually eat most of the dish and then take the leftovers (cold) the following day for a picnic as we fish."
