"My favorite way to prepare tuna steaks is from the cookbook, ONE POT SPANISH, by the late Penelope Casas. A Greek-American writer from Queens, she helped introduce Americans to Spanish cuisine in the 80s. Sadly, she passed away in August, 2013, at the age of 70, following complications of treatment for leukemia. In this recipe she suggests cutting..."

"Started with a Rachael Ray recipe that looked amazing but very high fat and calories! Gave it a much needed fat and calorie makeover and this is how it ended up. It isn't a diet dish but much healthier than the original. Hope you enjoy! For the FULL fat and calorie version please see http://rachaelrayshow.com/food/recipes/spaghetti-artichokes-and-tuna/

"You could serve this as a 1st course for company; it is not your usual mayo/tuna salad. The addition of fresh mushrooms and green peas really does the trick. I usually make a lighter version where I will strain the whey out of some plain yoghurt in a sieve and use 1/3 strained yoghurt and 2/3 mayo. "A lovely tuna salad with a twist; it uses apples and light Italian dressing! I like to use Gala or Golden Delicious apples. I also like to serve this with potato chips on the side, but it holds its own if you choose to serve it solo. Enjoy!"

"Not sure where I found this but it was on my computer and still looks good to me. With summer coming salad entrees that require little or no cooking work especially well. Cook some barley one night for dinner and reserve some to make this the next day. Though this is good after a couple of hours, it's even better the next day as the dill flavor..."

"This is what I put together for the Ready Set Cook Summer 2005 recipe contest. It is good by it's self, on crackers, on bread, or on a bed of lettuce. Great for a side dish, a main dish, or a summer day brunch."

"These are crispy fried potato cakes with a tuna and light vegetable filling that is just delicious. DH liked them with the tuna added though it is not traditional. If you prefer you can leave the tuna out for the original vegetarian version. I serve them with a corn free ketchup and plain yogurt to dip them in, sour cream would be good too. The original..."
